SHANDONG, China, September 21, 2026 — A food processing company recently visited the WAMIT trial-cutting center with a selection of its signature products: sandwich biscuits, chocolate-coated caramel nougat bars, sachima, fruit-juice gummies and Swiss rolls. These five snack categories, all challenging for conventional cutting tools, were put to the test under ultra-high-pressure waterjet. The results: smooth edges, intact layers and well-controlled crumb generation. The customer confirmed the trial results on site.
Food cutting has long faced three pain points: heat damage, compression deformation, and blade sticking with crumb loss. Sandwich biscuits are brittle and chip easily; sachima, a fluffy and porous pastry, falls apart at a touch; gummies are sticky and elastic; and the cream filling of a Swiss roll must not be disturbed. Ultra-high-pressure waterjet cutting — which uses water as the blade and involves no tool contact — addresses precisely these challenges.
On-site Trials: Five Foods, Five Tests

Sandwich biscuits: The waterjet followed a pre-programmed path to cut through the biscuit and filling in a single pass, leaving no chipped edges and keeping the filling layers clearly defined. Arcs and decorative shapes were formed in one operation, eliminating secondary trimming.

Chocolate-coated caramel nougat bars: With a chocolate shell over caramel and nougat, these bars tend to stick to blades and stretch when cut at room temperature. Cold waterjet cutting generates no temperature rise and no sticking, producing clean-cut surfaces with the nougat particles left intact.

Sachima: Precisely controlled pressure kept the fluffy, porous body from collapsing or crumbling. The cut pieces were neat and uniform, with reduced breakage during portioning.

Fruit-juice gummies: Soft, sticky confections are highly prone to deformation under pressure. A hair-thin water stream sliced through the gummy body gently, yielding a smooth cut surface with the fruit particles inside undisturbed.

Swiss rolls: The soft sponge and cream filling remained intact throughout cutting. Curves and shapes can be adjusted freely through the program, opening up possibilities for decorative cakes and automated portioning.
Why Cold Cutting Is a Natural Fit for Food Processing

One System, a Complete Food-Cutting Solution

Backed by an independently developed servo direct-drive pump and core ultra-high-pressure waterjet technology, WAMIT has established complete food-cutting solutions for the bakery, confectionery and frozen-food industries: from laboratory-scale machines to production-line systems, from straight portioning to decorative shape cutting, complemented by food-grade conveying, clamping and washing modules. Pressure, jet and feed parameters can be configured to match each food’s texture — one system covering a wide range of product categories.
From steel plates to sponge cake, ultra-high-pressure waterjet cutting is opening a new frontier in food processing. If your products are hard to cut, cut poorly or cannot be cut at all with conventional methods, you are welcome to send samples to WAMIT for on-site trial cutting and see the results for yourself.
